Day 2 Pickup Potluck hit or miss?

After a hit on saturdays potluck I wanted to try something a littler different. So I tried Creamsicle Fluff. I honestly made way too much so I have cut the recipe in half for your convince. I assumed this was a miss. Until My FRA (Family Readiness Assistant) asked for the recipe! So I suppose its somewhere in the middle of hit and miss, that is in regards to potlucks. Now if your looking for something that you can sit down in the kitchen and eat the entire bowl alone. Its a Hit!

Creamsicle Fluff

Ingredients

1 small box orange Jell-O

1 small box instant vanilla pudding

1 cup boiling water

1/2 cup cold water

1 - 8oz. thawed tub Cool Whip

1 -14 oz. can mandarin oranges, drained

1 cup mini marshmallows

In a large bowl combine orange Jell-O and boiling water. Mix well to dissolve and then add cold water and stir. Chill for 15 -20 minutes. Whisk in vanilla pudding mix until smooth and chill for another 10 minutes until it becomes thickened. Fold in Cool Whip, oranges and marshmallows. Chill until set, about an hour.

Side Note: I personally felt it was missing something, possibly a little crunch. Next time, I think I will add a fruit with a little crunch, or toffee or a nut.
