Let the 6th cycle commence... For those of you who are not well-knowledged in Marine Corps terminology. My Husband is a drill instructor. He works 3 months, no days off and 15 hour days or longer. These periods are referred to as cycles. He then gets 1 week- 2 months (the later rarely) off, this is referred to as outpost. While on outpost he is still required to go into work everyday, but not to the extent as "in cycle". At the beginning of every cycle we have a Potluck on the first Saturday and Sunday. It is the chance to spend time with our husbands, as the first few weeks we see them even less than usual.
I love cooking but I have struggled to master the "potluck dish science" until now! My dish came home empty and it was the simplest dish.
Pickles in a blanket!
I had a splendid time making these, as a child I remember growing up watching the matriarchs of my family make these and sneaking them as they made them. I caught the boys doing it countless times and I couldn't help but smile. My husband is pretty honest about my cooking, some times too honest. During the potluck he tried them and commented on them being good and interesting. I told him thanks, his response was " you made these? MMMM!"

Pickles in a Blanket
Ingredients
2 jars Dill pickles, Medium
2 packages Corned beef lunch meat
1 package Cream cheese
Simply spread the cream cheese on the corned beef lunch meat (can take a few tries to master if your cut is thin). Then roll up your pickle and voilà.
I would love to hear if it is a hit for you!
